Roasted PotatoesI had the opportunity to teach cooking classes at Luci’s Healthy Marketplace, in Phoenix. This is one of the recipes I used to show students how easy it is to prepare great tasting and healthy food for the family.

 

 

 

Roasted Rosemary Potatoes
Serves 4
Red potatoes scented with rosemary and broiled in the oven. Served as a side dish with any of your favorite entrees.

Ingredients
  1. 6-8 red potatoes
  2. Fresh Rosemary
  3. Sunflower Oil
  4. Salt & Pepper
Instructions
  1. Cut the potatoes into wedges and season with rosemary, olive oil, and salt and pepper.
  2. Lay the potatoes out on a sheet pan sprayed with pan coating, and cook in a 400 degree oven for 15-17 minutes, or until the potatoes are crunchy on the outside and soft in the middle.
