Baked Spaghetti Squash
A delicious mixture of herbs and spaghetti squash, served as an entree, or as a side.

Ingredients
  1. 4 cups cooked Spaghetti Squash
  2. 1 1/2 cup vegetable stock
  3. 1/2 cup yellow onions, diced small
  4. 1 tbsp Herb mix (thyme, oregano, sage)
Instructions
  1. Mix the onions with the Spaghetti squash and place in casserole dish.
  2. Add vegetable stock and cover.
  3. Cook for 30 minutes, or until the liquid is absorbed.
  4. Remove from the oven and toss in herbs
  5. Return the to the oven and cook another 5-10 minutes (add a bit more liquid if necessary).
Notes
  1. Serve as a side dish, or mix in some smoked tofu and serve as an entree.
